Kefir Pizza is the fast version of the classic brewer’s yeast dough, which always takes too long to rise. Kefir Pizza dough is made of only three ingredients: flour, kefir, and a pinch of yeast for savory pies. You just have to knead it, roll it out with a rolling pin and it will be immediately ready to be stuffed and put in the oven. The dough is not sticky at all and it is really easy to knead, you just need to lightly dust the work surface with flour and that’s it.

Ingredients for kefir dough:
140 g of gluten-free bread or pizza flour
110 g of creamy white sweet kefir (you can find it in the supermarket yogurt area) or
Greek yogurt / white yogurt
50 g of water
2 g of salt
5 g of savory pies yeast (optional)
Ingredients for yellow datterini tomatoes cream:
100 g of yellow datterini tomatoes
½ garlic clove
Extra virgin olive oil
Ingredients for the stuffing:
Yellow and red datterini tomatoes
Buffalo mozzarella nibbles
Basil
Balsamic Vinegar Delizia Estense

In a bowl, mix kefir with gluten-free flour, baking powder, water, and salt; mix all the ingredients with a spoon and then knead the dough with your hands until a softball is formed. Dust the work surface with flour and roll out the dough with a rolling pin. Put the gluten-free kefir pizza base on a baking sheet lined with baking paper. Prepare the cream of yellow datterini tomatoes: blend the datterini with garlic and extra virgin olive oil. Spread the cream on the pizza base. Stuff the pizza with slices of red and yellow datterini tomatoes and a drizzle of oil. Bake the pizza in a preheated oven, ventilated function, at 180 degrees for 18-20 minutes. When the pizza is ready, add buffalo mozzarella nibbles, chopped fresh basil, and enhance the flavors with drops of Delizia Estense balsamic vinegar.
